Pan grill fish / ikan panggang teflon


1 kilo ikan marinate semalam dg
Garam
Kunyit
Ketumbar sangrai
Air jeruk nipis
Merica
Ngohionh
Kecap asin
Bungkus masing2 ikan dg daun pisang.
Panggang dg teflon. Tutup teflonnya dan panggang 30 menit dg api sedang

1 kilo of fish marinate 1 night with
Salt
Turmeric
Coriander
Lime water
Pepper
Five spices
Salty sauce
Wrap each of them with banana leaf

Grill about 30 minutes on the pan covered with the lid.

Lapis Daging

Lapis daging



Presto 1 kilo daging yg sdh dimarinate dg:
0,5 sdt ngohiong
0.25 sdt garam
0.25 sdt paprika bakar/ smoked paprika
0.5 sdt gula
1 sdm kecap asin
Marinate beberapa jam
Tim dlm panci presto 10menit.
Daging bisa disimpan utk bbrp masakan yg berbeda.

Utk masakan ini saya hanya butuh kira2  kurang dari setengah porsinya. Daging diiris tipis dan dibakar dg sedikit minyak.

Sausnya dari kuah yg ditambah dg 2 sdm gula merah, sedikit smoked paprika dan cabe halus, panaskan sekitar 7 menit sampai saus mengental.

1 kilo of meat...seasoned with
0.5 teaspoon five spices
0.25 tea spoon Salt
0.25 tea spoon Smoked paprika
0.5 tea spoon sugar
1 table spoon salty sauce
Marinate for a few hours.
With little water presto for 15 minutes.

When the meat cools down, slice thinly.

We can use the meat for various purpose and take as much as we need only.

To make this I only need less than half of the whole ready meat, slice it and use a little oil to stir fry.

To make the sauce I use a little of the soup and add 2 spoons palm sugar and season with oregano and smoked paprika and some chilly, heat it for about 7 minutes stir it until the solution becomes thicker.

Tumis bawang cincang dan cabe.
Tumis daging hingga kering.

Rebus air, tambahkan garam,gula,merica,kecap asin dan 1 sdm tepung kanji yg diaduk dg 0.5  gelas air.
Masukkan sawi manis selama 5 menit.

Atur di atas piring dan hias dg topping

Sweet mustard
Topping
3 garlic crushed
2 chilly
stif fry until golden...put aside
Meat slice stir fry...put aside.

Boil water and add
0.5 spoon Salt
0.5 spoon sugar
a dash of pepper
0.5 spoon of salty sauce
1 spoon of cassava flour mix with half glass of water...
Mixed and wait until the water boils
Put inside the sweet mustard for 4 minutes.

Put the ready vegetables on the plate and topping with the stir fried meat, chilly and garlic

Nasi siram Caisim


3 bawang putih cincang
Dg 2 sdm minyak ditumis.
1 buah telur kocok dg garpu dan masukkan ke tumisan.
Tambahkan 100ml air. Tunggu mendidih.
100 gram daging iris balur dg 2 sdm tepung kanji, masukkan ke dalam rebusan. Tunggu 5 menut sampai daging matang.
Masukkan caisim yg sdh dipotong. Aduk selama 5 menit.
Bumbui dg garam,gula,merica, kecap asin.
Siram ke atas nasi.

3 garlic crushed and chopped
150 gram of green vegetable (mustard greens)
100 gram meat slice
1 egg beat with fork
3 spoons of cassava flour.

Heat the pot with 2 spoons of oil stir fry the garlic. Wait until the garlic becomes golden and pour the egg inside and stir it.
Add some 100ml of water to the pot, wait until the water boils.
Mix the meat with salt/ salty sauce, drop it slice by slice to the flour and then put into the hot pot.
Wait 5 minutes to make sure the slices meat are done and put inside the veggie...stir about 3 minutes and add some salt, a little sugar, pepper, salty sauce.
Pour on the top of a plate of rice.












Wedang jahe merah

Wedang Jahe Merah
250 gram jahe merah kerok dg ujung sendok kulitnya, geprek
130 gram gula merah batok
1200ml air
Rebus jahe selama 20menit
Tambahkan gula merah yg sdh dihancurkan dg batu uleg.
Rebus sampai gula merah larut dlm air panas.
Biarkan sampai dingin dan saring.


250 gram red ginger, skin with the tip of teaspoon under running water ( brush the skin until it is clean) crush it with a stone.
1200ml water, boil and put ginger in it, boil for 20 minutes with small fire.
130 gram palm sugar put in the ginger water. Boil until it disolve evenly.

Sieve the solution if you want to drink.
It is better to leave the ginger inside the solution to make it more gingery...

Cakalang or Skipjack tuna

Cakalang or Skipjack tuna


1 tongkol asap/pindang r3ndam di air garam dan cuka 10 menit. Cuci. Buang tulang2nya dan suir. Sisihkan.

8  bawang merah cincang
2 bawang putih cincang
4 cabe atau banyakan yg suka pedes
5 cm jahe, keprek
5 cm lengkuas, keprek
2 serai poton2 2 cm
10 daun jeruk
1 gengam penuh daun kemangi
Tumis bahan di atas dg 2 sdm minyak sampai wangi.
Masukkan ikan.
Tambahkan:
1 sdt gula
0.5 sdt garam
0.5 sdt merica
1sdt ketumbar (yg sdh digoreng tanpa minyak/disangan)
Aduk terus kira2 10 menit.

1 smoked skipjack (traditionally boiled and smoked) wash in salted water and little vinegar for 10minutes
 Rinse off. Remove all of the bones...and shred the meat of the fish. Put aside.

8  shallot chopped
2 garlic chopped
4 chilly
5 cm ginger, crushed
5 cm galangal, crushed
2 lemon grass cut 2 cms
10 lime leaves
Fresh basil about 1 handfull.
Stir fry the above ingredient with 2 spoons of oil until the smell comes out.
Put the fish inside.
Add
1 spoon sugar,
0.5 spoon salt,
0.5 spoon pepper,
1tbs ground coriander
Stir about 10 minutes.
And ready...

sup yg suka mamiku buat waktu aku kecil...membawa kenangan indah masa kecil saat semua kumpul makan bersama.

My mum made this recipe when I was a kid. This cooking brings back  the good memory of the past when the whole family ate together.

Simple buatnya tapi aku suka rasanya...ga heran ada yg namanya micin jamur krn jamur inipun rasanya mirip kaldu ayam.... 250 gram jamur, tiap jamur potong jadi 4
5 buah cabe merah, iris
5 buah bawang merah, iris tipis
Garam secukupnya
1 sdt Gula
1 sdt minyak wijen
Rebus semuanya dalam 600 ml air kira2 selama 7 menit
Dan siap.... Easy to make but I think it is delicious. I hope you like it too when you try this recipe.
250 gram paddy straw mushroom, each of them cut into 4
5 pieces chilly, chopped.
5  shallot slice finely
Salt enough amount
1 tea spoon sugar
1 tea spoon sesame oil

Boil 600ml water and put all the ingredient s inside, boil about 7 minutes and done!!

400 gram strawberry lumatkan dg chopper
70 gram gula
Campur keduanya dan masak 10 menit dg api sedang.

Real strawberry fruits and sugar only...
400 grams of strawberry
70 grams of sugar
Use chopper to chop the strawberry.
On medium fire cook the strawberry and sugar for about 10 minutes and done!!! So easy and natural....

When I was young I never thought that I would become a teacher. At that young age I thought I wanted to be a doctor because I thought being a doctor was cool.

Many times at school when my friends had troubles in understanding lessons, they would come to me for more explanation. A friend of mine said," Hi...Lucy, I think you are a good teacher. I understand now after you explain it to me.

Now I have become a teacher for more than 25 years and I really enjoy my profession.

Uncle Tan's Braised Pork Ribs

Ingredients
1kg pork ribs or soft bone (daging iga atau tulang lunak)
2 tbsp oil (2 sdt minyak)
40g galangal (lengkuas keprek)
40g ginger (jahe keprek)
1 tsp coriander powder (ketumbar)
2 sticks cinnamon (10cm kayu manis)
2 star anise (2 buah bunga pekak)
1tbsp bean paste (1 sdt tauco)
12 cloves garlic (12 bawang putih keprek)
2 tbsp dark soy sauce (2 sdm kecap manis)
1 tsp sugar (1 sdm gula)

Place pork ribs in a colander, pour boiling water over it and drain well.
Taruh daging di saringan dan siram air mendidih dan buang airnya.

Stir fry galangal, ginger, coriander powder, cinnamon, star anise and bean paste with 2 spoons of oil. Add the pork ribs to the pot and continue frying for 5 more minutes.
Tumis bumbu lalu masukkan daging.

Add garlic, dark soy sauce and sugar to the pot and mix well. Pour in enough water or stock to just cover the ingredients. Bring to a boil. Reduce heat to very low, cover and cook for about 2 hours until the meat is tender.

Dalam panci lain isi dg air secukupnya 400cc, masukkan dan aduk bawang putih,kecap dan gula lalu masukkan daging.  Masak dg api kecil selama 2 jam (pakai slow cooker juga boleh)

Bring the gravy to a boil and add more dark soy sauce and/or sugar according to taste. Something I do which is optional is to add a little corn or potato starch to thicken and add a sheen to the sauce.
Kuah daging bisa dikentalkan sbg saus dg menambahkan tepung tapioka yg diaduk dg air dan rebus sampai kental.

Pour the sauce back onto the ribs and serve with rice or noodles.

Tuang saus ke atas daging.

Not in the recipe but this is what I did to the meat: pan seared the rib to make it chrunchy.

Served with pickled chinese cabbage

Ga  ada di resepnya...tapi dagingnya aku panggang di teflon dg 1 sdm minyak wijen agar garing2 dan chrunchy... Hidangkan dg sayur asin...

Daging 500 gram buat guratan sedalam 1 cm lalu bumbui dg
Kecap asin
Merica
Ngohiong
Barbeque seasoning
Paprika smoked
Biarkan meresap 1 jam
Tim dlm panci presto selama 10 menit

Iris daging setebal 0.5 cm
Panggang di teflon dg sedikit minyak wijen.

Brokoli cuci di bawah air mengalir...patahkan kecil2 dan rendam dg cuka apel dan garam selama 10 menit
Bilas dan panggang di atas teflon bekas panggangan daging.
Tuang kuah kaldu 3 sdm dan aduk2 brokoli sampai semuanya layu (kira2 10 menit). Tambahkan kaldu jika brokoli masih keras.

Sajikan side by side dg daging panggang.

Kalau dagingnya tdk mengandung lemak maka tumbuk dg batu giling agar lebih lunak.

Easy to make but so tasty... 500 gram cumi cuci bersih dan buang tinta dan kulitnya..belah cumi agar bisa dibuka lebar.
Marinate dg garam dan merica...taruh di chilller.

Panggang di teflon dg minyak wijen... Hm...yummy and ada crunchy nya keluar dari cuminya sendiri.

Adalah film ttg program rehabilitasi yg dilakukan di Carson City, Nevada yg mengisahkan bagaimana kuda liar bisa dijadikan alat bantuan dlm program Anger Management dari para napi yg melakukan kekerasan sampai batas pembunuhan agar mereka belajar bahwa kekerasan bukanlah solusi masalah mereka.

Seorang narapidana yang telah dipenjara selama 12 tahun, Roman Coleman dipindahkan ke tempat rehabilitasi yang mengurus kuda-kuda Mustang.
Dia pun tergerak menaklukkan kuda liar tersebut, namun ternyata hal ini bukanlah hal yg mudah sehingga diapun frustasi dan meneriaki kuda tersebut.

Apa yg membuat kuda tersebut mendekati Coleman dan bagaimana persahabatannya dg kuda liar ini mengubah  persepsinya tentang dunia luar penjara dan cara dia seharusnya bertindak di masa lalu dan cara dia berurusan dengan orang2 lain di masa yg akan datang?

Bisakah kuda2 ini membantu para napi untuk mengontrol kemarahan mereka sehingga mereka tidak lagi kembali ke penjara setelah masa penjara mereka berakhir?







Telor Ayam Asin

Telor Ayam Asin atau Telor Asin Ayam...hayooo mana yg bener???

Penasaran banget apakah bisa buat telor asin pakai telor ayam...ternyata enak juga loh...
Ini hasil telor ayam asin yg digoreng dan direbus. Telor merahnya sudah mulai keras dan tidak pecah saat digoreng... Masa pengasinan 9 hari...tadinya mau 14 hari tapi ternyata 9 hari juga udah asin.



Bahannya:
8 telor ayam (kalau ada yg omega lbh bagus)..cuci bersih
Buat larutan garam 300 gram garam kasar dg 700ml air...(pakai air hangat agar garam lebih mudah larut)
2 Bawang putih..haluskan

Setelah air garam dingin, masukkan telor dan pastikan telor terendam semuanya, jangan mengambang ya...bisa juga menaruh plastik yg diisi air sebagai pemberat atau taruh tutup plastik wadah lain di atas telornya.

Setelah direndam selama 10 hari siap untuk digoreng atau rebus....

Kupat Glabed, Nasi Kari Jepang ala Chen Family

Nasi kari ala Chen family (adaptasi resep Nasi Kari Jepang dengan resep kupat Glabed)


Asalnya pakai resep Nasi Kari Jepang yg aslinya pakai madu dan apel parut tapi ternyata kurang cocok krn rasanya terlalu manis jadi saya modifikasi dg bumbu  rempah lokal resep my mum... Rasanya jadi oke banget... and hari ini dicoba lagi and hmm...rasanya mantap!!!!😁👍👍 Tumis
2 siung bawang putih iris
4 butir kemiri tumbuk kasar
5 buah cabai merah
1 ruas jari kunyit potong kasar
1 sdt ketumbar
1 sdt merica
6 bawang merah
Lalu blender
Campur bumbu dg daging 500 gram yg sdh dipotong, masukkan:
Sereh dikeprek
Lengkuas dikeprek
2 lembar daun jeruk
Garam secukupnya
Presto selama 10 menit

Setelah itu masukkan
3 kentang dipotong dadu
2 wortel potong dadu
1 bombay iris tipis (opsional)
Setelah daging dan sayur lunak kentalkan kuah dg
2 sdm tepung maizena yg diencerkan dg air dan aduk sampai kuah mengental
